Zucchini Muffin

1 cup all-purpose flour, sifted
1 cup zucchini, grated
1/2 cup Mott’s 100% Apple Juice
1/2 cup white sugar, sifted
1/4 cup softened butter
1pc egg
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp vanilla extract
1 tbsp black sesame seed


1. Combine all dry ingredients and mix well.

2. In a separate bowl, cream butter using electric mixer. Add egg, Mott’s 100% Apple Juice, vanilla extract and zucchini. Mix until well-blended.

3. Add dry ingredients and blend well.

4. Pour batter into ungreased muffin pan.

5. Bake in preheated oven at 180°C for 40 minutes.

6. Insert a toothpick to check for doneness. Should come out free from crumbs or cake batter.
